Recipe Nabulsi with fruit

(serves 1)
INGREDIENTS

  • 65g Nabulsi cheese
  • 15g each strawberry, banana, pineapple, mango and plum
  • 70g sugar
  • a pinch of cinnamon powder
  • 10g butter
  • 25g double cream
  • orange sauce, to serve
PREPARATION
1. Cut the cheese into rectangular bite-size pieces and soak
in water for 5 hrs, changing the water every 30 minutes
to reduce the salt content.
2. Drain cheese and grill evenly on both sides.
3. Chop fruit into small pieces. Heat sugar in a pan and caramelise it over a low heat. Mix in cinnamon and butter. Toss in the fruit. Cook gently until the fruit softens.
4. Turn off heat and allow to cool. To serve, place cheese on a plate, top with fruit. Pour double cream over and drizzle with orange sauce. Garnish with sugar brittle if desired.
