Ingredients
•Button mushrooms,sliced 10-15
•Shiitake mushrooms,sliced 8-10
•Leeks,sliced 2
•Spring roll wrappers 10
•Glass noodles 1 cup
•Oil 2 tablespoons + to deep fry
•Garlic,chopped 6-8 cloves
•Ginger,chopped 1 inch piece
•Salt to taste
•Black peppercorns,crushed 5-6
•Spring onions with greens,chopped 7-8
•Egg,beaten 1
Method
Soak glass noodles in three cups of hot water for two to three minutes. Drain thoroughly and spread on a plate to cool. Heat two tablespoons oil in a wok and sauté garlic and ginger. Add both the mushrooms, leeks, salt, crushed black peppercorns and toss until the moisture dries up. Cool and add spring onions and glass noodles and stir to mix well. Take one spring roll wrapper. Place two tablespoons of the mixture in the center and fold one side over the filling. Fold both the parallel sides over leaving the fourth side open. Apply the egg wash and roll it tightly. Heat sufficient oil in a wok and deep fry the spring rolls till golden brown. Drain and place them on an absorbent paper. Serve hot with a sauce or a dip.
