Marinated Paneer Toast


Cottage cheese (paneer):- 150 grams
Bread slices:- 8
Salt to taste
Crushed black peppercorns to taste
Red chilli flakes:- 1/2 teaspoon
Crushed garlic:- 1 teaspoon
Bay leaf:- 1
Fresh curly parsley sprigs:- 2-3
Extra-virgin olive oil:- 2-3 tablespoons


Step 1
Roughly crumble cottage cheese into a bowl. Add salt, crushed peppercorns, red chilli flakes and crushed garlic and mix well.

Step 2
Roughly tear bay leaf and add and mix well. Finely chop parsley and add. Add olive oil and mix again. Keep it in the refrigerator to marinate for a day.

Step 3
Toast bread slices in a toaster.

Step 4
Spread the cottage cheese mixture on the toasted bread slices.

Step 5
Halve them, arrange them on a serving plate and serve immediately.
