Mango Tokku (Instant Mango Pickle)













Time Taken : 15-30 mins

Ingredients:
1 Kg - raw mango, grated
4-5 tsp - Kashmiri chilli powder
4-5 tsp - salt
150-200g - jaggery
1/2 tsp - turmeric powder
200-250 ml - oil
1/2 tsp - mustard seeds
1 tsp - fenugreek (methi seeds)


Method


  1. Heat oil in a wok.
  2. Add mustard, let it splutter and add fenugreek seeds.
  3. Fry for 2 minutes and add raw grated mangoes.
  4. Add salt, turmeric powder, chilli powder, jaggery and let it cook for 10-15 minutes, till the oil starts separating from the grated mangoes.
  5. Instant mango pickle is ready to serve.
