Broad beans (sem ki phalli/papdi), 1 inch pieces 15
Sweet potatoes, 1 inch pieces 2 medium
White radish, 1 inch pieces 2 medium
Red pumpkin (bhopla/kaddu), 1 inch pieces 100 grams
French beans, 1 inch pieces 15
Brinjals, 1 inch pieces 2
Potato, 1 inch pieces 1 large
Mustard oil 1 tablespoon
Panch phoran 1/2 teaspoon
Whole dry red chillies 3
Turmeric powder 1 teaspoon
Ginger paste 1 teaspoon
.METHOD
Heat oil and add paanch phoron and whole red chilies. When they change colour, add all the vegetables and stir. Add turmeric powder and ginger paste and mix well. Cover and cook over low heat till all the vegetables are cooked. Increase the heat so that all the moisture is dried up. Add salt, sugar and slit green chilies and mix well. Cook for two minutes and take the pan off the heat. Serve hot.
