Recipe Kabuli chane ki shami

INGREDIENTS

500g chickpeas, boiled
10g green chillies
25g green coriander, chopped
100g potatoes medium, boiled, cut into small pieces
2g black pepper, freshly ground
5g dry mango powder
1g carom seeds
Salt, to taste
100g roasted cumin, coarsely powdered
5g ginger, chopped
10g garam masala powder
10ml lemon juice
50ml oil, for shallow frying

PREPARATION

In a non-metallic bowl, mix together chickpeas, potatoes, dry mango and cumin powders, black pepper, salt, carom seeds, ginger, green chillies, coriander, garam masala and lemon juice. Mix well, then pass it through a fine mincer. Set aside for a few minutes. Now rub a few drops of oil on your hands and make equal sized balls with the dough mixture. Flatten the dough balls into patties. Shallow fry the patties in oil on a non-stick pan until the crust is golden and crispy. Blot excess oil on kitchen paper. Serve with mint chutney.
