Ingredients

Rice soaked, drained well and coarsely ground:- ¼ cup
Milk reduced till half:- 1½ litre
Oil:- 1 tablespoon
Almonds thinly sliced:- 10
saffron strands a few
Green cardamom powder:- ¼ teaspoon
Sugar:- 6 tablespoon
Falooda cooked:- 1 cup
Rose syrup:- 8 tbsps
Khus syrup:- 1 tbsp


Method

Step 1
Heat oil in a deep non-stick pan, add almonds and saute till lightly browned.

Step 2
Add 1 cup thickened milk to the ground rice and mix.

Step 3
Add 2 cups thickened milk, saffron and green cardamom powder to the pan and mix well.

Step 4
Add the rice paste and cook, on medium heat, stirring continuously, till the rice gets cooked and the mixture thickens.

Step 5
Add the remaining milk and mix well to correct the consistency. Transfer the phirni into a big bowl and stir continuously till it cools and no film forms on the surface.

Step 6
Add sugar and stir continuously till the sugar dissolves and phirni cools completely.

Step 7
Put falooda equally into serving glasses. Put 2 tbsps rose syrup over the falooda. Drizzle 1 tbsp khus syrup along the sides of the glasses.

Step 8
Put the phirni into the glasses, drizzle a little rose syrup and khus syrup on top and serve.
