Recipe Curried Chicken Pita Sandwich

Ingredients

Boneless chicken cut into thin strips:- 200 grams
Curry powder:- 1 tablespoon
Pita breads:- 2
Oil:- 1 tablespoon
Onion chopped:- 1 medium
Garlic cloves chopped:- 10-12
Chicken stock:- 1/2 cup
Chilli sauce:- 2 tsps + t
Fresh thyme sprigs:- 2
Salt to taste
Spring onion bulbs:- 4
Yogurt:- 2 tablespoons

Method

Step 1
Heat a non-stick pan and heat pita breads in it.

Step 2
Heat oil in a pan, add onion and garlic and saute for 1 minute. Add chicken and curry powder and mix. Add chicken stock, mix and cook and 2 minutes.

Step 3
Add chilli sauce and thyme and mix. Add salt and mix. Reduce heat and cook till chicken is done.

Step 4
Halve pita breads and open out the pockets. Roughly slice spring onion bulbs.

Step 5
Stuff chicken equally into pita pockets. Drizzle 1 tbsp yogurt, a few drops of chilli sauce and a few spring onion slices into each pocket and serve immediately.
