Cupcakes for Kids
Any cake recipe can be made into cupcakes.
- Place cupcake liners in muffin tins and fill them 3/4 full until the batter is used up. Bake at the same temperature as the cake recipe and check after 15 minutes to see if they're done.
- Cheesecake recipes make luscious cupcakes with built-in portion control. If your cheesecake recipe calls for a graham cracker crust, press some into the bottom of each cupcake liner or simply use a sugar cookie for the crust. Fill to within 1/2 inch of the top of the liner. Baking is easy--no water bath required. Bake at 300 degrees F (150 degrees C) for 20 to 25 minutes. (Mini muffin-size cheesecakes will take 15 to 20 minutes.) Cheesecake cupcakes are done when they are evenly puffed up in the center. Cool and top with cherry pie filling or fruit preserves.
