Cucumber Paratha is an interesting variation of stuffing used for making stuffed parathas. Although preparing this paratha with Cucumber stuffing is a tricky one, the final dish is really tasty and also tastes unique compared to other types of stuffed parathas. The tricky part is to manage the water that comes out of Cucumber and controlling the amount of water required for kneading the flour mixture without making it too soft for a good stuffed paratha.

Ingredients for preparing Cucumber Paratha
  • 3-4 medium size cucumber
  • 1 cup of wheat flour
  • 1 cup rice flour
  • 2 medium size chopped onion
  • 1 teaspoon vegetable oil
  • 3-4 chopped green chili
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon garlic paste
  • 1teaspoon roasted cumin powder
  • 2 tablespoon seasame seeds
  • 1 teaspoon coriander leaves
  • salt to taste

How to make Cucumber paratha
1. Take 3-4 medium size cucumber peel it off grate it and keep aside. Keep this aside for about 2 hrs in order to bring out the water as much as possible. Accumulate the water in a container to be used in step 2.
2. In a bowl put 1 cup of wheat flour, 1 cup rice flour and grated cucumber(step 1) mix well. Cucumber will release its excess water. Depending on how much more you need, add the water accumulated from step 1. But always add water little by little, very carefully.
3. Now Put 2 medium size chopped onion, 1 teaspoon vegetable oil, 3-4 chopped green chili, 1/2 teaspoon grated ginger, 1/2 teaspoon garlic paste, 1 teaspoon roasted cumin powder, 2 tablespoon seasame seeds, 1 teaspoon coriander leaves, salt to taste in the bowl (step 2) and mix well.
4. Mix well all the contents and make a soft dough, Do not add water.
5. Make small ball of the dough and roll it in the shape of roti.
6. Take a non-stick tawa and put the paratha on it and cook on both side with 1 teaspoon on vegetable oil arround it and fry till it become golden brown in color.
