Recipe Clams in chilli sauce

INGREDIENTS

  • 100g clams with shell
  • 100ml vegetable oil
  • 50g garlic, chopped
  • 100g roasted chilli paste
  • 150ml light chicken broth
  • 50g green chillies, sliced
  • 40g red chillies, sliced (plus 1 chilli for garnish)
  • 30ml fish sauce
  • 100ml oyster sauce
  • sugar, to taste
  • 40g sweet basil leaves (plus extra for garnish)


PREPARATION
1. Wash clams under cold water. Discard any that are cracked.

2. Heat oil in a wok and sauté garlic for 1 minute. Add the roasted chilli paste and fry until fragrant.

3. Add clams; stir-fry over high heat for 2-3 minutes. Add chicken broth, chillies, fish sauce, oyster sauce, sugar and sweet basil leaves. Stir well for 2 minutes or until the clams are open. Remove clams that do not open.

4. Serve clams garnished with sweet basil leaves and chilli.
