INGREDIENTS
- 100g clams with shell
- 100ml vegetable oil
- 50g garlic, chopped
- 100g roasted chilli paste
- 150ml light chicken broth
- 50g green chillies, sliced
- 40g red chillies, sliced (plus 1 chilli for garnish)
- 30ml fish sauce
- 100ml oyster sauce
- sugar, to taste
- 40g sweet basil leaves (plus extra for garnish)
PREPARATION
1. Wash clams under cold water. Discard any that are cracked.
2. Heat oil in a wok and sauté garlic for 1 minute. Add the roasted chilli paste and fry until fragrant.
3. Add clams; stir-fry over high heat for 2-3 minutes. Add chicken broth, chillies, fish sauce, oyster sauce, sugar and sweet basil leaves. Stir well for 2 minutes or until the clams are open. Remove clams that do not open.
4. Serve clams garnished with sweet basil leaves and chilli.
