INGREDIENTS
300g flour
10g baking powder
50g cocoa powder
200g eggs
410g castor sugar
20ml water
60g egg whites
220g unsalted butter
25g cocoa powder
dark chocolate ganache
icing sugar, for garnishing

PREPARATION
1. Preheat oven to 220°C. Line a 60cmX40cm baking tray with parchment paper.
2. To make sponge, sieve flour, baking powder and half the cocoa powder, set aside.
3. Beat eggs and 300g of castor sugar in a bowl. Fold
egg mixture into dry ingredients and mix until combined. Pour batter into prepared tray and bake for 7-10 minutes. Set aside and let cool.
4. For icing, boil remaining sugar and water over low heat until it bubbles. Let it cool slightly.
5. Whip egg whites until soft peaks form. Add sugar syrup to egg whites and whip at high speed until the mixture cools. Add butter and the remaining cocoa powder and beat for 7 minutes until the icing is creamy.
6. Spread half the icing on cake. Starting at long side, roll to form a Swiss roll. Spread the remaining icing on top.
7. Heat ganache to 80°C and pour on top. Dust with
icing sugar.
