Ingredients

  • 285g chocolate, lightly sweet
  • 40g butter
  • 5 egg yolks, pasteurised
  • 60g sugar
  • 5 egg whites, pasteurised
  • 30ml vanilla, to taste
  • 240ml heavy cream, whipped

Preparation

1. Combine chocolate and butter; melt over a water bath.
2.
Whip egg yolks and half the sugar until the yolks achieve full volume.
3.
Whip egg whites and the remaining sugar until egg whites achieve full volume.
4.
Fold egg whites into egg yolks. Fold butter-chocolate mixture into egg-sugar mixture. Add vanilla and foldin whipped cream. Present chocolate mousse inlong-stem glasses.
