Chocolate and black cherry pudding

125ml castor sugar
5ml vanilla essence
50ml cake flour
45ml cocoa powder
5ml bicarbonate of soda (baking soda)
100g pecan nuts, chopped
400g canned black cherries, drained.
Keep juice aside for the sauce
125ml brown sugar
30ml cocoa powder
whipped cream, for serving
1. To make the pudding, cream butter and sugar together until light and creamy. Add eggs and vanilla essence, and whisk well. Add the rest of the ingredients and mix well.
2. To make the sauce, pour the cherry juice into a measuring cup. Add water until 250ml (unless the juice already reaches 250ml on its own). Heat with the sugar and cacao and bring to a boil.
3. Spoon the batter into the sauce and cover the pot. Simmer lightly for 30 minutes and check if it is cooked. If not, cover and simmer for a few more minutes.
4. Serve with vanilla ice cream or whipped cream.
