Chile Corn Bread


Ingredients
  • 3 Cups whole kernel frozen corn, uncooked
  • 2 Eggs, beaten
  • 1 Can green chilies, finely chopped
  • 3 tbsp Polyunsaturated oil
  • 1/2 tsp Salt
  • 1/4 Pound Mozzarella, diced into cubes
  • 1 Cup yellow cornmeal
  • 1 Cup low-fat yogurt
  • 3 tsp Baking powder
Directions
  1. Mix salt, cornmeal and baking powder.
  2. add oil ,yogurt and eggs and mix well.
  3. Add corn, cheese and chilies and mix well. Pour batter into a lightly greased 9-inch square-baking dish.
  4. Now bake in preheated 350 degree F oven until golden brown.
