CHHENA PODA PITHA RECIPE

Ingredients:
2 lbs - part skim ricotta cheese
3 tbs - sooji
13 to 15 tbsp - sugar
15 to 20 - raisins
15 to 20 - cashew nuts
3 to 4 - small green cardamoms


Method

  1. Put the Ricotta cheese and the sooji in a container and knead throughly using a hand blender.
  2. Fry the cashew nuts in a little oil so that it browns a little.
  3. Be careful not to overcook.
  4. Add the cashews and all other ingredients into the cheese mixture and mix thoroughly.
  5. Grease the baking dish with some butter and transfer the batter into the baking dish leaving about a 1 inch from top empty.
  6. Pre-heat the oven at 325 F and bake it for 60-90 minutes until the top turns light brown.
  7. Cool it after taking out from the oven.
  8. Then cut into 2 in X 1 in squares and serve.
