Ingredients

Cauliflower small florets:- 1 cup
Red chilli powder:- ½ teaspoon
Turmeric powder:- ¼ teaspoon
Garam masala powder:- ½ teaspoon
Dried mango powder:- ½ teaspoon
Salt to taste
Refined flour (maida):- 1 cup
Maize flour (makkai ka atta):- 1 cup
Gram flour (besan):- 1 tablespoon
Soda bicarbonate a pinch
Oil for deep-frying
Chaat masala for sprink


Method

Step 1
Mix together cauliflower florets, red chilli powder, turmeric powder, garam masala powder, dried mango powder and salt in a bowl.

Step 2
To make the batter, mix together refined flour, maize flour, gram flour and soda bicarbonate in another bowl. Add sufficient chilled water and mix well to make a thick batter.

Step 3
Heat sufficient oil in a kadai.

Step 4
Dip cauliflower florets in the batter till they are evenly coated, slide them into the hot oil and deep fry till crisp. Drain on absorbent paper.

Step 5
Transfer on a serving plate, sprinkle chaat masala and serve hot.
