Bell pepper peanut curry

Time Taken : 15-30 mins

Ingredients:
3 bell peppers, any colour
100g peanuts, dry roasted and ground
2 tbsp sesame seeds, toasted
1 tsp - chilli-ginger-garlic paste
2 tsp - oil

1/2 tsp - cumin seeds
1/2 tsp - mustard seeds
1/4 tsp - turmeric powder
1/2 ts p - coriander powder
1/2 tsp - garam masala
Salt to taste
1/2 tsp - sugar
1 tsp - lemon juice
Cilantro to garnish

Method

  1. Dry roast peanuts and sesame seeds until golden.
  2. Let it cool and grind to a coarse powder.
  3. Chop peppers into cubes.
  4. Heat the oil in a pan, add mustard seeds and cumin and let them splutter.
  5. Add the bell peppers and quickly saute them.
  6. Add the ground mixture, chilli-ginger-garlic paste, garam masala and salt.
  7. Stir well and add sugar.
  8. Cook on medium heat for 5 mins, stirring frequently.
  9. Sprinkle with lemon juice and serve garnished with cilantro.
