INGREDIENTS
2 tbsp olive oil
750g stewing steak, trimmed, cut into 3cm cubes
1 large brown onion, finely chopped
2 garlic cloves, crushed
2 bell peppers, cut into 2cm pieces
2 tbsp sweet paprika
2 dried bay leaves
2 cups beef stock
400g can diced tomatoes
2 tbsp sour cream
fresh rosemary and oregano, to garnish

PREPARATION
1. Preheat oven to 180°C. Heat 1 tbsp of oil over medium-high heat. Brown meat in batches.

2. Heat remaining oil in a large oven-proof pan. Add onion, garlic and peppers. Cook until onion has softened. Add meat and paprika. Cook for a minute then add bay leaves.

3. Stir in stock and tomatoes. Cover pan and bring to a boil. Transfer to the oven and bake for 2 hours.
4. Spoon 1/4 cup liquid from goulash into a bowl, add sour cream, stir until smooth. Add this to the goulash and stir again. Garnish and serve.
