Breakfast Banana French Toast

Ingredients
Banana puree 1 cup
Brown bread slices 8
Eggs 4
Castor sugar 1/2 cup
Vanilla essence 1 teaspoon
Fresh cream 1 tablespoon
Cornflakes crushed2 cups
Oil 1 tablespoon
Icing sugar 1/4 cup
Cinnamon powder 1/4 teaspoon



Method
Step 1
Break eggs into a bowl, add banana puree, castor sugar and vanilla essence and whisk well. Add fresh cream and whisk again.
Step 2
Spread cornflakes on a plate.
Step 3
Dip 4 bread slices in the egg mixture, coat them with cornflakes and place them on a plate. Repeat the process with the remaining 4 slices and place them over the slices on the plate and press lightly.
Step 4
Heat oil in a non-stick pan, place the sandwiches in the pan and shallow-fry, turning sides, till evenly cooked and golden on both sides.
Step 5
Mix icing sugar and cinnamon powder in a bowl.
Step 6
Halve each banana French toast, arrange them on a serving plate, dredge sugar mixture on top and serve immediately.
