Baked chicken pasta

Prep time: 15 mins
Cooking time: 15 mins
(serves 4-6)

  • 80ml each butter and flour
  • 500ml chicken stock
  • 250ml cream
  • 30ml olive oil
  • 1 onion, finely chopped
  • 250g beef bacon, cubed
  • 2 sticks of celery, chopped
  • salt and freshly ground black pepper, to taste
  • 15ml thyme
  • 1 whole chicken, cooked, deboned and chopped
  • 500g pasta, cooked and drained
  • 250g cheese, grated
1. Preheat oven to 180C. Melt butter in a medium saucepan and stir in flour until smooth. Add the chicken stock and stir until a white sauce forms. Now stir in the cream.
2. In a separate pan heat the olive oil and fry the onion, beef bacon and celery until cooked. Season with salt, pepper and thyme. Remove mixture from heat and stir in the chicken.
3. Place the cooked pasta in a large oven dish, followed by the chicken mixture. Cover with the white sauce, sprinkle grated cheese on top and bake in the oven for 15 mins.
