Almond Butter Cake

Ingredients:
1. All Purpose Flour -1 1/2 cups
2. Sugar - 1 1/4 cups
3. Butter (unsalted) - 1/2 cup
4. Almond (blanched) - 1/2 cup
5. Eggs - 3
6. Milk - 1/2 cup
7. Baking powder - 1 tsp
8. Baking soda - 1/2 tsp
9. Lemon/Orange peel - 1/2 tsp
10.Salt - a pinch
11.Vanilla extract - 1/2 tsp
Method
1. All Purpose Flour -1 1/2 cups

6. Milk - 1/2 cup
7. Baking powder - 1 tsp
8. Baking soda - 1/2 tsp
9. Lemon/Orange peel - 1/2 tsp
10.Salt - a pinch
11.Vanilla extract - 1/2 tsp
Method
- Finely powder the sugar in a mixer & add butter which is brought to room temperature to the powdered sugar & mix them well.
- To this mixture add 2 whole eggs & 1 egg yolk, retain the egg white. Beat them well until fluffy but not dry. Add Vanilla extract to this.
- Put flour, baking powder, baking soda, salt in a large bowl. Use a sieve to rid of lumps of all the dry ingredients. To this, add lemon/orange peel. Mix it well.
- Add the dry ingredients to the wet mixture slowly alternating with milk. Finally add some coarsely ground almonds to this & blend them well.
- Grease a round cake pan with butter & some flour, pour the mixture onto it.
- Bake the cake in a 350 degree pre-heated oven for about an hour. Brush the cake with egg white after 1/2 hour. Arrange whloe almond pieces in a regular manner.
- Insert a thin knife or a tooth pick & it should come out clean indicating the cake is done.
